Menu Plan Monday - 12/17

Perhaps the week before Christmas is not the best time to go gluten-free, but I gotta go with my motivation. My original goal was grain-free, but that seems like Mission Impossible to me right now.
Monday: A.M. Prep: Make chicken broth
Chicken & rice soup
Tuesday: Dinner at Mom's
Wednesday: Slow-cooker Italian chicken & veggies
Prep: soak pinto beans
Thursday: Layered taco dip w/ Mexican rice, homemade refried beans
Friday: Sweet & Spicy Crockpot Chicken w/Basmati rice, steamed broccoli
Saturday: A.M. Prep: Make mashed potatoes
Shepherd's pie, mixed baby greens salad
Sunday: Garlic-lime chicken, Basmati rice, glazed baby carrots (Papa Bear's Favorite :)

The weather has been getting consistently hotter, so I need to avoid heating up the kitchen with the oven or long-simmering dishes. While I was trying to put my menu plan together, I realized that I need more crockpot recipes. My first stop was Stephanie O'Dea's A Year of Slow Cooking where I found a several recipes I'm going to try this week.
Do you have any tried & true slow cooker recipes?
Monday: Chicken & rice soup, salad
Tuesday: Slow-cooker Italian chicken & veggies, oatmeal bread
Wednesday: Spaghetti, salad, garlic toast
Thursday: Rustic cabbage soup, sourdough bread
Friday: Crockpot falafels on pita w/yogurt sauce, lettuce, tomato
Saturday: Sweet & spicy salmon, Basmati rice, garlic-butter green beans
Sunday: Honey garlic chicken, Basmati rice, steamed broccoli

Spring is official this week! Along with the warm breezes, thunderstorms, spring flowers, budding trees, and busy birds, comes soccer season. That means we'll be coming and going to practices, games, and cub scouts each week. And of course, that means I need a meal plan so we don't end up eating on the run.
My toddler is experiencing tooth decay, so I've been reading Ramiel Nagel's Cure Tooth Decay. I'll be incorporating as much homemade chicken bone broth as I can into our meals, as well as fish, cooked veggies and greens, yogurt, and maybe sauerkraut. The biggest challenge will be to reduce or avoid bread and pasta, except maybe some sourdough. My goal is to get a sourdough starter going this week. Wish me luck!
Monday
- Make sourdough starter
- Boil one dozen eggs for snacks
- Roast chicken, boiled red potatoes, garlic-butter green beans
Tuesday
- Feed starter
- Make chicken bone broth
- Chicken & rice soup, salad
Wednesday
- Feed starter
- Baked lemon-pepper salmon, sweet potatoes, steamed broccoli
Thursday
- Feed starter
- Chicken tortilla soup (served with corn tortilla strips & Greek yogurt)
Friday
- Feed starter
- Beef stew, salad
Saturday
- Feed starter
- New recipe, as yet undecided :)
Sunday
- Make sourdough sponge
- Grilled tilapia, rice & black beans, cole slaw

Autumn is officially here and we're kicking it off with some of our cool weather favorites. I love Fall! Homeschool co-op classes and cub scouts make Thursdays our busy day each week, so that will be my slow-cooker day. Since Papa Bear is off on Sunday, I'll let him treat us to his special legs...grilled chicken legs, that is. They go great with Sunday Night Football!

Sunday, we made a family outing to the orchard and a farm stand and came home with lots of fresh produce. Needless to say, this week's menu will be making use of peaches, tomatoes, corn, peppers, squash, green beans, and eggplant (I haven't had much experience with this one).

Soccer starts this week and we have three boys playing this season. I'll definitely need to keep up on my meal planning because if I don't, we will end up eating out too much. Wednesday's dinner idea resulted from finding Coleman's Mild Italian Chicken Sausage on manager's special.

Christmas break is over! Time to get back to our school work and a regular schedule, as much as possible. We haven't been eating fish very much lately so I'm going to try a new recipe on Tuesday. My guys are tired of lemon-pepper salmon. I'll be posting my recipe for Turkey Sausage this week too.

We have family coming in to visit this week and we'll be having an early Thanksgiving dinner with my husband's family on Sunday. With four extra people in our house all week and a houseful this weekend, I'll need to fix easy and economical meals that feed many. I'm grateful that Laura's Lean ground beef is on sale for $2.99/lb this week!
On a side note: My new kitchen cabinets and counters won't be ready until the following week and I am currently (and have been since May) dishwasher-less!. Please pray for me. Just kidding...sort of.

Tuesday: Vegetable Beef Barley Soup
Prep: Soak oatmeal
Wednesday: Spaghetti Bolognese

Menu planning is essential for me to maintain my sanity and let's just say that I have been neglecting it for a while and my family is feeling the effects. Too much money is being spent eating out or on extra trips to the grocery. Kids get cranky when they have to wait too long because I'm not prepared. And my husband has been eating out way too often since he's on the road and only has a small window to take his dinner break. So, hopefully, this meme will help me maintain menu planning consistency.
Here is what we will be eating this week:
Monday: Italian Chicken & Veggies (crockpot)
Tuesday: Chicken Tortilla Soup
Wednesday: Spaghetti Bolognese
Thursday: Chicken Tacos w/Mexican Rice (crockpot)
Friday: Pizza (chicken pesto, margherita)
Saturday: Chili & Cornbread
Sunday: Barbeque Chicken Sandwiches w/Home Fries (crockpot)
