Easy Crockpot Chicken Recipes

During the hot summer, I try to use my crockpot as much as possible to avoid heating up the house. Here are some of our faves. These recipes usually make enough for our family of 6. I'll probably have to increase the amounts as our younger boys get bigger.

Chicken Tacos

  • 4-6 frozen chicken breasts
  • 1 jar favorite salsa (store-bought or homemade)
  • 1 tsp cumin

Place ingredients in crockpot on low 6-8 hours or high 4-6 hours. When chicken is tender, shred using two forks, then stir together with salsa. Serve in tortillas with taco toppings of choice. I like them loaded with Mexican rice, refried or black beans, lettuce, tomato, salsa, cheese, sour cream, and guacamole.

Barbeque Chicken Sandwiches

  • 4-6 frozen chicken breasts
  • 1 bottle of favorite natural BBQ sauce
  • 1/4 c water

Place chicken in crockpot, add water, and pour sauce over. Cook on low 6-8 hours or high 4-6 hours. When  chicken is tender, shred using two forks, then stir together with sauce. Serve on whole wheat buns.

Italian Chicken & Veggies (click to see post with pictures)

  • 3 lbs baby red potatoes, washed & quartered
  • 1 lb baby carrots
  • 4-5 frozen chicken breasts
  • 1 pkt Good Seasons Italian Dressing Mix, prepared as directed
  • 1 c water

Place ingredients in crockpot in order listed, pouring Italian dressing over all. Cook on low 6-8 hours or high 4-6 hours, until chicken and veggies are tender. Shred chicken and stir together before serving. After shredding chicken, you can let it cook a while longer to thicken, if desired.
